Chestnut Honey Madeleines


I'm back! I've been on vacation the last couple of weeks and actually miss cooking while away from home so I was anxious to make this week's Sweet Melissa Sunday's recipe for Honey Chestnut Madeleines.
I don't have a madeleine pan and decided to pick one up but didn't come across any this week so I used my handy dandy mini muffin pan. Madeleines are a delicate, cake-like cookie that are light and delicious. Melissa's recipe calls for grinding toasted hazelnuts with confectioner's sugar to make a hazelnut flour. The hazelnut flour gives the cookies a nutty flour that is enhanced by the addition of browned butter. The spongey texture is achieved by incorporting whipped egg whites and the subtle, yet rich, sweetness comes from a tablespoon of honey (I used honey I picked up while on vacation in Greece - yummy).

  2. They look very cute! I'm glad they still domed a little bit (I have the batter ready, sitting in the fridge right now). I was a little skeptical about the batter not containing any baking powder but it doesn't seem to have affected them. I will be posting mine later.
