This is gonna be a quick post! Ruby from I Dream of Baking chose Coconut Custard Pie for this week's Sweet Melissa Sunday's treat.
I love coconut but haven't made a coconut pie of any kind in years. The crust is the All Butter Pie Crust recipe from the book that we have made several times already. I'm getting pretty good at making the crust, but struggle with making a pie crust that is pretty. Pre-baking the shell for this recipe didn't help the appearance of my pie crust at all. But it tastes good and that's what matters, right? The custard comes together easily in a blender. The pie is rich, creamy, old-fashioned, and pretty much delicious!

Looks great! At least you made the pie crust, i gave up and used a premade pie crust!
ReplyDeleteIt looks great! Pie crusts are so fickle. I cheated this week and went with pillsbury rolled dough. Doing little ramekinds which are blind baking in the oven as I type this. We'll see how it turns out!

Your pie looks great! I agree about the crust - Melissa's all-butter recipe is so yummy but no matter how much I chill it before I bake it, it doesn't hold its shape. Oh well, like you said, as long as it's tasty, who cares :)

ReplyDeleteHave you had the chance to go to the farmer's market yet since they built the pavilion? We had a fabulous time this past Saturday morning. The wood-fired pizzas they are selling there are delicious.
The pie looks delicious! As for the crust, I know we always care way more about how it tastes than how it looks :-)
