Happy Mother's Day to all you moms out there!
Chaya at My Sweet and Savory selected Orange Blueberry Muffins with Pecan Crumble for this week's Sweet Melissa Sundays. A great pick for Mother's Day and a great choice for me as we had a post-Kentucky Derby breakfast at work this week and these muffins were my contribution.
The group has made a couple of different variations using this muffin base in the past and the consensous has been that they are a bit heavy and dry. However, I didn't find that to be the case this time. I followed the recipe as directed and didn't find them dry. I used fresh blueberries and I think that helped add a little extra moisture to the cake. I loved the hit of orange from the zest paired with the blueberries. The only substitution I made was to use almonds instead of pecans because I think they pair better with blueberries. The crumble topping is fabulous and takes these muffins to another level of deliciousness.

ReplyDeleteGood call on the almonds! Your muffins look great! I did alter the recipe a bit to ensure mine wouldn't be dense or dry and they were a hit for my Mother's Day brunch.
ReplyDeleteI didn't have any problems with the dough either - though I did add a splash more milk. The almonds are a great idea! Will have to try that sometime.

ReplyDeleteBeautiful muffins! Post-Kentucky Derby sounds like a great party idea and I'm sure they were a hit. I ended up not using nuts, as my kids aren't into nuts, but I think almonds is a great idea.

ReplyDeleteMy muffins weren't too dry, but the batter was definitely heavy. Enough that it makes me want to "tinker" with it a little bit still. Glad you liked them!
