SMS Pecan Shortbread Cookies


Happy Easter!

Of the many things I love about Christmas, one of my favorites is when Archway Pecan Wedding Cookies arrive in the grocery store. They are only available during the holidays and the first time I spy them from behind the wheel of my cart, I know that Christmas is here! I love the combination of the super sweet confectioner's sugar against the slightly salty cookie interior and the crunch of pecans. Yum!

When I saw that Lara of The Lab chose Pecan Shortbread Cookies for this week's Sweet Melissa Sundays recipe, I thought a little taste of Christmas at Easter is not a bad thing.

These cookies are so easy to make. I love a cookie recipe that doesn't require that the butter be at room temperature! A big pile of butter is thrown into a food processor with some sugar, salt, vanilla, flour, and pecans. Scoop 'em up, bake 'em, and then roll 'em around in some confectioner's sugar. One of the easiest cookies I have made recently. While I give this recipe high marks for ease, the taste was just so-so. They certainly aren't bad, just a little bland. Maybe more sugar? Or, it could simply be that they just didn't live up to my expectations that have been built on a box of cookies that I have only been able to enjoy once a year for decades...

  2. I thought the taste was mild too. I did enjoy the recipe, super easy! Funny cus these remind me of Christmas too. My mom makes them every year during the holidays! Your cookies look great!

    In regards to taste, now that I think about it, they were a little mild. I think i was just so happy with the butter I forgot about it :)

  4. I didn't try the cookies since I really don't like pecans, but my neighbor enjoyed them. I did love how easy they were to make though - I'm with you on not waiting for butter to come to room temp :) Your cookies look wonderful!
