SMS Sugar Cookies

Sugar cookies can be either simple or elaborate, but always delicious! Nina of Nina's Cupcakes choose Sugar Cookies for this week's Sweet Melissa Sundays selection.

I love fancy decorated cookies and decided this was the perfect opportunity to give try making some myself. While there was some frustration decorating the cookies, overall it was fun and it could easily become an obsession!
The cookies themselves were easy to make. I followed the lead of some of my fellow SMSers and added a little more sugar, some lemon juice, and baking powder to the cookies. I also used both vanilla and almond extract for a little more flavor.

The SMS recipe doesn't call for frosting the cookies so I had to find a recipe for the royal icing. I ended up using one from a Julia Child cookbook but will try one that uses meringue powder next time in the hopes that it whips up a little more quickly. I had a lot of fun using my new disposable pastry bags, tips, and squeeze bottles and using new techniques for decorating the cookies. We are all anxious for spring (the 60 degree weather I posted about last week was short lived) so I pulled out the most spring-like cookie cutters I have and ended up with a hodge podge of flowers, ice cream cones, and pigs. I can't wait to try using different colors of frosting on future batches.
