Baked Sunday Mornings - Peanut Butter Banana Creme Pie



I'm gone bananas with back to back banana recipes!  Sometimes that just how it works out when you participate in blogging groups.  I've been such a slacker lately so I was determined to make the next recipes for the groups I'm a part of and it just so happens they featured vastly different banana pie recipes within two days of one another.

Peanut Butter Banana Creme Pie is from Baked Explorations for the Baked Sunday Mornings group.  In typical Baked fashion, this ain't the banana creme pie you're probably used to.  The crust uses a traditional banana pudding component but in a new, and in my opinion, improved way.  Nilla wafers are pulsed together with some butter and sugar to form a fantastic pie crust.  I was surprised at how much I liked the crust both in flavor and texture.  It was super crunchy and delicious.

The pudding layer is a basic vanilla custard and was pretty damn delicious just licked from the back of the spoon.  I thought this was the easiest and fastest custard recipe ever.  No tempering of eggs and was done in five minutes.  The vanilla custard is poured over the crust and then placed in the fridge to cool.  The banana in this pie comes from a layer of sliced bananas placed on top of the custard.  If you aren't into bananas, omit this layer and you will still have an awesome pie.  Just change the name to Peanut Butter Creme Pie.

Speaking of peanut butter, how perfect is it with bananas?  A peanut butter cream cheese mixture, (this was delicious by itself too, not that I licked another spoon or anything), is gently combined with whipped creme to create the final layer of the pie.  The peanut butter flavor adds a ton of flavor but didn't overpower the other flavors here.  Chocolate covered peanuts are the final touch and are the perfect adding just a hint of chocolate and another texture.

  4. i felt bad for you guys guys when i saw the fridays with dorie post come in... but you seem to have taken it all in stride ;) your pie looks great! i like that the yellow of the dish hints at the flavor of the pie!
