Honey Lime-Lemonade



When I was a young my mother belonged to a spa. Back in the 70's spas were gyms for women complete with those contraptions that were supposed to jiggle the fat off of you, kind of an earlier shake weight.

Most of my memories of the spa were watching from the little day care as the women, dressed in tights and long-sleeved leotards, spent there time gossiping and spending a lot of time in the pool. Most definitely the best part was visiting the spa bar where I would always order a lime juice and my sister would get a papaya juice. The lime juice was electric lime green, sweet, tart, and perfect. I would love to find a jar of that sweet nectar from my childhood but I'm sure manufacturing of it was discontinued due to a study finding that the artificial colorings contributed to the increase in ADHD or something.

This Honey Lime-Lemonade I made isn't quite the drink of my childhood, but it is delicious nonetheless. Lime and lemon juice combined making for a drink that is not too tart. The addition of honey adds an earthy sweetness. The perfect thirst-quencher during the dog days of summer!

2/3 cup sugar
2/3 cup water
2/3 cup freshly squeezed lime juice (about 4 medium limes)
1/3 cup freshly squeezed lemon juice (1-2 medium lemons)
4 cups water
2 Tbsp honey

Combine sugar and 2/3 cup water in small saucepan. Cook over medium-high heat until sugar is dissolved to create a simple syrup. Meanwhile, squeeze limes and lemons and pour juice in pitcher. Add 4 cups water, simple syrup, and honey. Stir to combine.

Refrigerate and serve over ice with slices of lemon and lime.

  1. Very refreshing. I also like to add limes to lemonade. It just tastes better.
