SMS Ginger Snaps


Gloria from The Ginger Snap Girl choose what else - ginger snaps for this week's SMS.

I like ginger snaps but wasn't sure how they would go over in our house so I opted to halve the recipe. I rarely mess around with the measurements when baking but many of the bloggers that participate in SMS frequently halve (or even quarter) the recipes so I decided to try it this week and still ended up with more than two dozen cookies. The flavor of these ginger snaps is subtle but fantastic! I recently picked up some crystallized ginger that I've been itching to try so I diced up some of that and threw it in the batter to intensify the ginger flavor. I also cooked the cookies less than the recipe recommended and ended up with the perfect consistency, soft in the center with slightly crisp edges.

These cookies were really easy to make, delicious, and would be great in a lot of different ways (as a pie/cheesecake crust, sandwiching ice cream, crumbled over a fruit crisp...). Visit Gloria's site, here, for the recipe and give them a try!

  2. Your cookies look great! I like the thickness of them...mine were a tad thinner than I would have hoped. Great idea to incorporate crystallized ginger! Sounds yummy. Glad to hear these were a hit at your house. Thanks for baking along this week.

  4. wow you halved it and still got over 2 dozen? my first half batch only got me 16 cookies! i must have used biggg scoops of dough. Yours look great! I'm glad you were able to get them to that yummy consistency!

  8. Your cookies look perfect! Extra ginger is always a good idea in my opinion, so I'm sure they were excellent with the crystallized chunks.

  11. I bought crystalized ginger for the first time at Christmas for the intent to make gingersnaps; however now it is July and no gingersnaps! Glad to see your post..I think I will give her recipe a try! Just found your blog...love it...I'm following! :)
