SMS Double Crusted Caramel Apple Pie


The delightful Susan from Baking with Susan, picked Double Crusted Caramel Apple Pie for this week's Sweet Melissa Sundays. At the risk of appearing un-American, I have to admit I'm not a big fan of apple pie and therefore have never made one. However, the addition of caramel intrigued me and I decided to give it a go.

While not difficult, the recipe involves several steps; making the crust (including rolling it out and allowing it to chill twice), making the caramel, preparing the filling, and then finally assembling and baking the pie. The only change I made to the recipe was to add about a 1/2 teaspoon of cinnamon. I figured my pie would be pretty ugly since some of the top layer of crust was pieced together but I was pleased with the rustic appearance of the finished pie. Unfortunately, the shots I took of the uncut pie didn't make it onto my memory card (hence the weird photo).

The reviews of this recipe have been mixed on SMS and I found the all butter crust to be the star of the recipe. The caramel was good on its own but was kind of lost in the pie. I think it contributed to the loose texture of the filling and would have been better served as a topping. A combination of sweet and tart apples may have improved the flavors as well.

  1. It looks amazing! Although the shots didn't make it onto the memory card, I think that we all can imagine how amazing it looked! I loved the rustic look. It's more homey!

  5. I love rustic-looking apple pie - I think that's exactly how it's supposed to look :) Great job on your pie! I agree with you - the crust was definitely the star. I even made the crust again today in another recipe because I enjoyed it so much!

    I love apple pie, but my bottom crust usually comes out soggy:(

  8. Your pie looks wonderful! I am sorry I didn't use the all butter crust recipe, we really didn't care for the other one and yours looks so delicious. I completely agree with you about the caramel being good on its own but getting lost in the pie, we had to same results. Also, good call on adding cinnamon, we missed it in ours.
