Baked Sunday Mornings - New York Style Crumb Cake


The intro to this recipe says that New York Style Crumb Cake is all about the crumb. And crumbs there are a plenty on this cake. The crumb to cake ratio is about 2 to 1.


A crumb is generally defined as a small particle of something so I don't think that calling the topping on this cake crumbs is accurate. This is more like a layer; thick and dense. Full of cinnamon, sugar, and butter the crust is definately the star of the cake. However, I really enjoyed the flavor and texture of the cake layer. Sour cream and a copious amount of butter added richness and flavor but yet the cake was light and fluffy.


With three and half sticks of butter, this more than qualifies as dessert but tasted like breakfast to me. It was throughly enjoyed at my house and when I took a container full to work, all that remained were crumbs. And the teeny tiny type of crumb, not the topping.
